So I'm low on cash, but even lower on food.

I want food that is good for me, not junk food.
I want food that is enough to last me for a while.
I want food that is versitile, but not extremely difficult to make.

any suggestions?

It's true. I was thinking about this post last night when I was making my pasta dinner, and it occurred to me how many different things you can make with a few ingredients.

I use a ton of arugula. It's great in things, on things, or as a meal in itself. Last night I sautéed onions, garlic, bell pepper, and arugula with a can of tuna[!], and tossed with penne pasta and grated pecorino cheese. These are pretty much the same ingredients I used in my last post, only subbing pasta for eggs and adding a meat.

Arugula's also great for this really easy salad: Arugula, sweet corn, tomato, onion, pecorino, and a sun-dried tomato or citrus vinagrette.

Man, I use a lot of the same stuff over and over, but I like finding a few good ingredients and seeing how many different things I can make. Granted, it's hard to do fresh produce on the cheap, but if you're cooking at home a lot, it won't go bad, and you'll have some pretty healthy and varied things to eat.
